Full kitchen brigade. Not a skeleton crew. The entire team that runs Saturday night service is there for Saturday lunch. Every station is manned by the person who owns it.
Chef attention. I'm in the kitchen for every Saturday lunch service. If you're paying €70-85 for a tasting menu, the chef should be there. On Tuesday at most places, you're getting the sous chef's best effort with half the team.
Proper timing. A 5-course tasting menu needs 90 minutes. A 7-course needs 2 hours. You can't rush that. Saturday lunch gives you the full afternoon - no one's checking their watch at 14:00 because dinner service starts at 19:00.

Same experience as Saturday night, different light. The dining room gets natural light through the front windows. It's quieter - maybe 25-30 covers instead of 45-50 at dinner. The pace is slightly more relaxed, but the food and service are identical.
Dress code: Smart casual. Lisbon in August is hot - light linens, summer dresses, no one's wearing a jacket. We care more about whether you're comfortable than whether you're formal.
Timing: Arrive 12:00-13:00. Earlier is better if you want the full 2-hour experience for the 7-course menu. We stop seating at 14:00 to give late tables enough time.

Honest answer: the demand doesn't exist. In 20+ years running kitchens, I've learned that you can't force a dining culture that doesn't exist.
Lisbon locals don't do midweek lunch at fine dining restaurants. Tourists are on the tourist trail at lunchtime. The 25-30 people who would book a Tuesday tasting menu lunch aren't enough to justify bringing in a full brigade.
Saturday works because: Locals treat it as a special occasion. Visitors have time. The restaurant can fill 30-35 covers. That's enough to run proper service with the full team.
What If You Can't Do Saturday?
We're open for dinner Monday through Saturday, 19:00-23:00. That's when the full experience happens - full kitchen team, full dining room, the energy that makes a restaurant feel like a restaurant.
Monday and Tuesday dinner are your best alternatives. Quieter than Friday and Saturday, easier to book, same standards, same menus. You're more likely to get a table by the window. I'm in the kitchen. The full team is there.
